I love colors — purple is one of my favorites. It has a calming and elegant visual appeal. A root vegetable that provides such appeal is purple sweet potato. In addition to its color, purple sweet potato has a creamy texture that adds smoothness to many desserts.
This purple sweet potato dessert cup is a great alternative to cakes and pies. Prepare the ingredients the night before and whip up this pretty dessert in a few minutes before serving.

Here’s the recipe:
Ingredients: 1 medium purple sweet potato, 2 bananas, 2 tablespoons of frozen blueberries, 1/2 cup of canned coconut milk, 1/2 teaspoon of vanilla extract, and some white chocolate chips (optional)
- Freeze 2 sliced bananas overnight, wrapped in parchment paper
- Boil purple sweet potato and cool (can boil potato the night before and keep potato in fridge)
- To prepare the dessert cup: Blend 1/3 of the frozen bananas in blender with coconut milk
- Add 1/2 of the remaining banana slices into mixture in step 3 and blend
- Add the remaining banana slices into mixture and blend
- Peel purple sweet potato and cut it in half
- Place half of the potato in a bowl and mash it
- Add 1/3 cup of potato into blender with banana mixture and blend
- Add 2 tablespoons of frozen blueberries into banana mixture and blend
- Blend in 1/2 teaspoon of vanilla extract
- Pour mixture into cups and serve
The dessert mixture is creamy and sweet on its own. However, if desired, top the dessert cups with white chocolate chips and sweet potato pieces for an extra sweet touch!
