My daughter and I have been fighting a cold since last week. Just as I thought it was going away, it came right back at us! I resorted to the good old remedy — some lemon honey with hot water.
On the other hand, my daughter is not a fan of such remedy. As I picked some fresh lemons from our tree, I thought of making a light dessert that might entice her to enjoy lemon and honey.
My wish came true! Once she had a spoonful of the jello, she said, “Yummy! It’s like candy!” I’d say it’s a delightful success!
Here’s the recipe:
Ingredients: 2 large lemons orΒ 100 ml of freshly squeezed lemon juice, 150ml of water, 2 1/2 tablespoons of honey, 1/2 tablespoon of Lakanto monk fruit sweetener, 1 envelope of unflavored gelatin
This recipe makes 2 servings.
- Squeeze lemon juice into a glass measuring cup (I used 2 large lemons, which provided 100 ml of juice)
- Fill the measuring cup with water, total to 1 cup of lemon water mixture
- Pour the lemon water mixture through a strainer into another container to remove the pulp
- Pour 3/4 of the lemon water mixture into a small pot and heat with low heat till it starts to boil
- Sprinkle gelatin over the 1/4 of lemon water mixture and stir till all gelatin is dissolved
- Let the gelatin mixture stand for 1 minute
- Pour the boiled lemon water mixture into gelatin mixture and stir
- Add honey and monk fruit sweetener (adjust amount to taste)
- Pour gelatin mixture into serving glass
- Place gelatin mixture into fridge until set (approximately 2 hours)
