Dragon Fruit Agar Jello

I am excited to share my Valentine’s series finale piece with you all — a naturally pink colored agar jello! As you may know from my previous recipes, I love dragon fruits. What’s not to love? It’s refreshing, nutritious, and has one of my favorite colors — PINK!

Thanks to companies like Suncore Foods, we can easily purchase readily made pretty pink dragon fruit (pitaya) powder. I have made jello with such powder but the jello doesn’t appear as clear as pictured. Don’t get me wrong. I love pitaya powder and I used it to make the pink milk as pictured. However, for the clear pink effect, I turned to the pink dragon fruit skin.

If you have cut dragon fruits on a white cutting board, you probably have noticed the pink color residue on the board. This discovery led me to successfully create a clear pink jello. It’s an easy recipe but require some time to turn the water into pink. I also decided to keep the jello’s sweetness to a minimum, and enhance it with evaporated milk, if desired.

Here’s the recipe: 2 dragon fruits, 1 packet of agar agar powder, 6 cups of water, 1 can of evaporated milk, and 1 teaspoon of pitaya powder. Optional: fresh fruits for garnish

Day 1

  1. Cut dragon fruits with skin into about 12 pieces and remove green parts of the skin
  2. Place dragon fruit pieces in water, cover and place in refrigerator overnight

Day 2

  1. Pour dragon fruit infused water into pot (water only, not the fruit)
  2. Add agar agar powder into water
  3. Stir and heat agar-water mixture over medium heat
  4. Pour agar-water mixture into your favorite molds
  5. Place molds with mixture into refrigerator
  6. The beautiful pink agar jello should be ready in a few hours. Jello can be stored in fridge overnight as well.

Prior to Serving

  1. Mix 1 teaspoon of pitaya powder with 1 can of evaporated milk
  2. Whisk milk and powder mixture well together (milk should be light pink as pictured)
  3. Place pink agar jello in bowls and pour pink milk* over jello
  4. If desired, add fruits of your choice to decorate

*The more milk is poured over the jello, the sweeter the jello gets. Pour just the right amount of milk for your taste buds!
