After becoming a mom, Halloween has a whole new meaning. Besides getting my kids the perfect costumes, I also think of creating some eye-popping Halloween treats. After all, seeing the smiles and excitement of my little ones is my best Halloween treat.
Inspired by the Persimmon Chia Smoothie Cup in my previous post, I created these mini Persimmon Potion Pots. They are easy to make and festive. Now go whip up some of these potion to charm your loved ones on Halloween!
Ingredients: 6 persimmons, approx. 8 tablespoons of So Delicious coconut milk, and 4 mini black cauldrons
- Boil tapioca until soft or your desired texture (I used 15 large tapioca pearls per pot)
- Remove tapioca from water
- Blend 2 persimmons with 2 tablespoons of coconut milk, add more milk if needed
- Repeat step 3 two more times
- Place persimmon mixture into pot
- Use a small tong to place tapioca on top of persimmon mixture
I kept the pots in the fridge until it was dessert time. The persimmon mixture can be enjoyed with a spoon like pudding. It has a natural sweetness from persimmons but add some monk fruit sweetener, if additional sweetness is desired.
